Global travel and social media mean consumers have access to, and want to explore, new flavours, combinations and innovations constantly. So, what are the ‘tastes’ they’re reaching out for right now? FLAVOURS LESS TRAVELLED According to Bidfood’s 2024 report, consumers are very enticed by authentic and traditional world cuisine, as they try to get closer to the ‘real thing’. In fact, 56% said they would pay more for a dish if they perceived it as authentic. They’re especially interested in Mexican, Eastern European and Caribbean food. SWEET AND SPICY ‘Swicy’ is growing rapidly across multiple categories, from condiments to snacking. Hot honey, especially, is considered the ‘one to watch’, with shoppers choosing it to bring extra life to everything from noodle bowls to salads and sandwiches. NEWWAVE PLANT-BASED In 2023 some products aimed at the vegan and vegetarian market disappeared from shelves as companies failed to pivot and respond to increasing consumer demand for cleaner ingredients decks, and less processing. The industry is now responding with products that put real food first. Whole Foods Market says, “We’re seeing new and emerging protein- forward products with mushrooms, walnuts, tempeh and legumes in place of complex meat alternatives.” We sampled some very interesting vegan products at 2024’s IFE in London, including ‘meaty’ shiitake mushroom stems from Australian brand Fable Food Co.
