This engaging sessionwill introduce attendees to the Academy’s Structured Approach to Tasting Cheese - a foundational framework for understanding and articulating flavour, texture, and aroma. Participants will delve into the principles of sensory analysis, take part in a guided blind tasting of five carefully selected cheeses, and develop confidence in using professional tasting terminology. The sessionwill be led by acclaimed industry experts Noemie Richard-Stein and Tracey Colley, offering an unmissable opportunity to learn from two of the sector’smost respected voices. BFBI The Expo is delighted to partner with the Brewing, Food & Beverage Industry Suppliers Association (BFBI) to create fresh opportunities for cross-sector collaboration in 2025. This partnership opens the door for the trade audience to connect with beer producers whose processes sharemany synergies with dairy manufacturing. As part of this collaboration, BFBI has enlisted TomWalker & Sons to present a series of cheese and beer pairing sessions, hosted by industry expert Alex Barlow.
