21 specialityfoodmagazine.com ISLAND BAKERY THE TASTE OF MULL W hile provenance is a key selling point for the fine food sector, few foodie collaborations can claim such proximity as the two businesses involved in the creation of Island Bakery Isle of Mull Cheese Biscuits. “They are a real family affair,” explains Dawn Reade, who co-founded the business with her husband Joe in 1994 and started producing biscuits in 2001. “With Joe’s brothers Brendan & Garth running Isle of Mull Cheese on the family farm just over the field from the bakery, making a cheese biscuit was a long overdue development. “The cows graze in fields next to our bakery, amid the aroma of baking biscuits,” continues Dawn, “and the sustainable energy that powers our bakery also powers the farmwhere the cheese is made.” The range is three-strong and includes a Traditional cheese biscuit, a Harissa & Cumin variety, and an Onion & Thyme option. “The spicy Harissa & Cumin biscuit is our office favourite with its touch of heat and complexity of flavour,” says Dawn.
