The milk is sourced exclusively from local, family-run farms, all within 25 miles of the dairy. Smoked Red Fox: This carefully matured cheese, typically 16–18 months, is gently smoked over oak chips, creating a rich, aromatic layer that complements its sweet- savoury complexity and signature crunch. Silver Fox: Handcrafted and ma- tured for up to 20 months, Silver Fox offers a rugged mouthfeel and a richness of flavour, first savoury and robust, then hints of caramel sweetness, ending with a creamy finish and satisfying crunch.
