traditional Loire Valley-style ripened goat’s cheeses. After months of research, trials, and hard work, including a stint making goats’ cheese in the Loire Valley, plus some epic arguments about cheese names, we finally came upwith the five soft goat’s cheeses named Ashlynn, Clara, Luna, Blanche and Trufflyn. Over the past couple of years we added twomore cheeses to the family, made with cow’smilk: Delilah is a triple cream cow’smilk cheese in the shape of a pyramid; and Greta is a creamy cow’s curd cheese infused with garlic and basil. All of our cheeses aremade withmilk from local farms and each has its own distinct personality. 22 HARVEY & BROCKLESS B ased inWorcestershire, the Cheese Cellar Dairy is our very own cheesemaking operation, headed up by the clever and charming George Bramham. Cheese Cellar Dairy was first established in 2011 as we wanted to expand and grow our fresh and ripened goat’s cheeses which were in high demand by our top customers, such as restaurants and hotels, airlines, and sporting stadiums. To help us achieve a top artisan cheese, we sent George to spend a week in Valencay region of France to learn directly the techniques used inmaking these types of cheese. We wanted to create a range of cheeses similar to the flavour to their customers, without compromising on quality. We also offer a diverse range of chutneys to pair with cheese, from classic Comfy Onion Marmalade to Smoked Chilli Jelly. This range consists of eight chutneys and jellies and these are made at our production site in Evesham. Exciting launches on the horizon... This spring, we are launching five new sauces, which will be featured at our Meet the Makers event this May. These new sauces have been carefully created by our Product Development Kitchen and have been launched to follow trends and meet the demand from our customers. Award-winning goat’s cheeses Our Ashlynn goat’s cheese flavour develops beneath the rind and becomes increasingly runny and intense as it matures. A cheese of contrasts in more ways than one. Ashlynn has a striking monochrome appearance thanks to a pure white interior set against a dark ash-coated rind and a thin line of charcoal running through the cheese. Our goat’s cheeses can be perfectly paired with our Harvey & Brockless Kitchen Smoked Chilli Jelly and Comfy Onion Marmalade.
